Black tea
A very rare handpicked black tea from Taiwan of limited quantity cultivated at an altitude of about 800 meters in Yu Chi. The tea is produced of cultivar TTES 21, a hybrid of a Keemun tea cultivar and a Indian Assamica tea cultivar from Kyang. Hong Yun was introduced as late as in 2008.
The teas of Hong Yun cultivars often fetch high prices and last year the tea won a French tea competition. The tea has a balance and a sweet honey tone if you prepare the tea at the low temperature we specify.
This variant of Hong Yun is produced by Mr.Lee at a family-owned tea plantation where tea has grown since the Japanese era in Taiwan.
Origin: Yuchih, Nantou, Taiwan
Taste: Well balanced tea with a fruity sweet tone.
Appearance: Whole dark leaves, rolled.
Steeping Instructions:
4dl teapot - use about 8 grams of tea. Pour in 85 °C water and let it steep for 20 seconds.
2dl teapot - use about 4 grams of tea. Pour in 85 °C water and let it steep for 20 seconds.
Second steeping 1.5 minutes.
Third steeping 30 seconds.
