Organic green tea
Organically certified Japanese tea, harvested in spring 2024 from the first flush, Ichibancha. This tea has undergone Ichouka, a very light oxidation process that enhances and deepens the flavor profile with rich and complex floral notes. The tea is traditionally grown from Zairai tea bushes, which are not a specific cultivar but a native variety grown from seeds. The tea bushes differ in appearance, and the leaves vary in shape, giving the tea a natural diversity and unique character.
Unlike the typical Japanese method of producing green tea, where the leaves are steamed, this tea is pan-fried in the Chinese style. This is a rare and traditional method that gives the tea a unique character.
